Instructions: Heat shortening or salad oil in a skillet over medium heat. Saute the meat, onion, green pepper and garlic together until onions are golden, about 10 minutes. Stir in tomatoes, corn, salt, chili powder and pepper. Cover and simmer for 5 minutes.
Blend the 1/2 cup cornmeal with 1 cup water. Stir cornmeal mixture into meat mixture and simmer for 10 minutes more. Stir in olives and turn into a 9- by 13 inch baking dish. Spread cornmeal topping over meat. Bake uncovered in a 375-degree oven for 40 minutes. Cornmeal topping: In a saucepan, scald the milk with the salt and butter. Gradually add the 1/2 cup cornmeal and cook, stirring until thickened. Remove from heat and stir in the cheese and eggs. Email this Recipe:
