Instructions: 1. Brush the salmon all over with a little oil then season. Press the herbs on top of each fillet. Heat 2 tbsp oil in a frying pan, then cook teh salmon, herb side down for about 2 minutes over a high heat until golden. Turn teh salmon, lower the heat and cook for 4-5 minutes until just cooked. Set aside.
2. Remove the tomato seeds, then chop the flesh finely. Add the remaining oil to the pan and toss in the tomato. Cook briefly until the juices start to run. Add the lemon then season well.
