Instructions: Preheat the oven to 350 degrees. Prepare and roll out the pastry. Ease into a 9-inch pie plate; trim and flute the edge. In a mixing bowl, combine the eggs, sugar, butter, cornmeal, lemon juice and vanilla extract; mix well. Pour into the pastry-lined pan. Sprinkle with the pecans and coconut. Cover the edge of the pie with foil. Bake for 25 minutes; remove the foil. Bake for 20 minutes longer, or until a knife inserted near the center comes out clean. Penny Halsey (ATBN65B). Recipe
