Instructions: Heat the oil and add the vegetables.
Stir fry for 5 minutes then add the tamarind paste and stir well for a minute. Pour in the water. Stir. Add all the other ingredients and bring to the boil. Then reduce the heat and simmer until all the vegetables are cooked but crunchy Pick out and discard the lemon grass. Serve warm. This soup is a good starter for a light summery meal.
