Ingredients:
Amount Ingredient
1 tbl sunflower oil
4 tbl carrots grated
120 gm peas
60 gm French beans chopped finely
150 gm mushrooms sliced
1 tsp tamarind paste diluted in 4 teaspoons water
900 ml water
1 tsp ginger grated
1 tsp sugar
12 x blades lemon grass 4cm long
12 x Holy Basil leaves
Instructions:
Instructions: Heat the oil and add the vegetables.

Stir fry for 5 minutes then add the tamarind paste and stir well for a minute.

Pour in the water.

Stir.

Add all the other ingredients and bring to the boil.

Then reduce the heat and simmer until all the vegetables are cooked but crunchy Pick out and discard the lemon grass.

Serve warm.

This soup is a good starter for a light summery meal.
