2 lb summer squash
1/4 cup onion, chopped
1 can cream of mushroom soup
1 cup sour cream
1 pkt Pepperidge Farm stuffing mix, (8 ounce)
Instructions:
Instructions: Peel squash, then slice. Boil squash and onion for about 5 minutes. Melt butter and mix with stuffing mix. Mix sour cream and soup. Drain squash and onion; add to sour cream mixture. Use an 8 x 8 inch pan (do not grease). Put half the stuffing mixture on bottom of the pan. Over this, put all of the squash mixture; cover this with remaining half of the stuffing mixture. You may sprinkle Parmesan cheese or other grated cheese over the top. Bake at 350 degrees for about 30 minutes.

Serves 6.
