1 lb butternut squash peeled/seeded/cubed
1/4 cup egg beaters 99% egg substitute
1/4 tsp ground cinnamon
1/8 tsp nutmeg grated
2 x egg whites
1/2 x apple tart
1 tbl diet margarine melted
Instructions:
Instructions: Steam squash until very tender, approx. 10 minutes.

Puree squash, egg substitute, cinnamon and nutmeg in food processor.

In a large bowl, beat egg whites until stiff. Fold in squash mixture. Coat a 1 quart baking dish with nonstick spray. Spread squash in dish. Smooth top with a spatula. Peel and core the apple, then cut into slices.

Arrange apple slices on top of squash. In a cup melt margarine and maple syrup, mix and pour over apples. Bake at 350 F. for 30 minutes or until golden and slightly puffed.

Serves 4.
