Instructions: Steam squash until very tender, approx. 10 minutes.
Puree squash, egg substitute, cinnamon and nutmeg in food processor. In a large bowl, beat egg whites until stiff. Fold in squash mixture. Coat a 1 quart baking dish with nonstick spray. Spread squash in dish. Smooth top with a spatula. Peel and core the apple, then cut into slices. Arrange apple slices on top of squash. In a cup melt margarine and maple syrup, mix and pour over apples. Bake at 350 F. for 30 minutes or until golden and slightly puffed. Serves 4. Excellent source of Beta Carotene Email this Recipe:
