Ingredients:
Amount Ingredient
1 cup vegetable broth (water may be used)
3/4 lb cleaned small squid (if large, slice into rings)
1/3 lb green beans, trimmed
1/2 lb tomatoes, seeded and sliced
2 tbl plus 2 teaspoons extra virgin olive oil
1 x handful fresh herbs*
1 x shallot, minced
1/2 clv garlic, peeled
1 tbl capers
1 tbl wine vinegar
Instructions:
Instructions: Bring broth to a boil in a saucepan; add the squid and boil 1 minutes or until the squid turns opaque. Drain and place in a serving platter. Steam or boil the green beans until crisp tender; drain and add to the squid. Gently stir in the tomatoes. In a blender or food processor, make a sauce with the remaining ingredients.

Pour sauce over the squid and vegetables, and serve.

*Herbs: marjoram, chervil, parsley, thyme and mint
