Instructions: Cut the squid sacs into strips or rings and chop the tentacles roughly.
Heat the oil in a wide frying pan or wok over the highest heat until very hot and hazy. Add the squid garlic chilli spring onion and ginger root and stir fry for about a minute until the squid is just opaque. Add the fish sauce and lime juice stir briefly and draw off the heat. Season sprinkle with coriander. serve immediately with plain boiled rice. Serves 46 This stir fry of squid is another recipe where the coriander comes into play at the very last minute.
