Instructions: Melt the butter in a saucepan. Add the onion, scallions, garlic, parsley, and thyme and cook over medium heat until soft, about 3 minutes. Stir in the ketchup, vinegar, lime juice, honey if using, hot sauce, salt and pepper and 1/2 cup water. Bring sauce to a boil, then reduce the heat and simmer for 3 minutes. Correct seasoning, adding more hot sauce, lime juice, or salt totaste. Transfer the sauce to a clean jar.
