Instructions: Rub pepper & oil on both sides of steaks. Heat heavy skillet slowly to very hot. Add steaks to sear quickly on both sides...about 30 seconds on each side. Remove to a plate.
Remove skillet from heat. Add butter, when melted, stir in shallots, return to heat and saute, stirring constantly 2 minutes. Add Worcestershire sauce, mustard and salt. Return steaks to skillet. Cook 2 minutes on each side. Remove to heated serving plate and keep warm. Add wine to skillet; cook rapidly till reduced to on half. Stir in brandy, parsley, and chives...simmer 2 minutes. Spoon a little sauce over each steak, and pass the rest. This is wonderful with the Harvest Stuffed Potatoes we ran a while back, and a green salad, and some good red wine!! Fancy, yet easy!!
