Instructions: Trim steaks and flatten lightly with a meat mallet, season with salt and pepper. Heat butter in a large frying pan until foaming, add beef and cook for 2 minutes, both sides, on medium high heat.
Remove steaks from pan and set aside. Cooking times vary depending on how you like your steak. Add spring onion, mushrooms, garlic, brandy and Worcestershire sauce to pan, cook for further 3 minutes, or until mushrooms are tender, stiring. Add gravy, cream and parsley, heat until boiling.
