Instructions: Slice kidneys.
Heat 1/2 oil in a large fry pan, add meat and cook until well browned. Remove from pan and place in a large pot. Add kidneys to pan and saute 2 minutes to brown. Add to meat. Heat remaining oil in fry pan, saute onion and bacon to lightly colour, stir in flour and cook 1 minute, stir in tomato paste, red wine, stock, worcestershire and seasonings. Bring to the boil, stirring to obtain a smooth sauce and pour over the meat. Simmer all ingredients over low heat, stiring regularly, for 1 hour or until meat is tender. Check seasoning. Transfer mixture to a pie dish, cover with pastry, seal the edges and decorate top with strips of pastry. Make a slit in the top with a sharp knife, brush with beaten egg and bake 200C/390F for about 20 minutes until pastry is crisp and golden brown. Mushrooms may also be added to this dish if desired.
