1 lb Stewing Steak
6 oz Lamb Kidney
5/8 oz Seasoned Flour
2/3 oz Onion Chopped
2/3 x Salt And Pepper
1/4 cup Beef Stock
1/3 oz Game Bits
Pastry
8 oz Flour
2/3 lb Fresh Bread Crumbs
2/3 oz Suet - Shredded Beef
1/3 tsp Salt
Instructions:
Instructions: 1. Mix pastry together to stiff dough with water . Roll out and use .75 to line 3-4 pt (for 1.5 lbs steak) pudding basin. - not too thick!

2. Cut beef and kidneys in cubes and toss in seasoned flour. Fill lined basin with alternate layers of beef, kidney, and onions, sprinkling with parsley and salt and pepper.

3. Add stock to well (lots!) cover meat. Top with pastry lid - tie down with buttered foil or greaseproof paper and pudding cloth. String to help get it out!

4. Steam for 4 hours

NOTES : Use oysters, mushrooms (Mmmmm) or ox livers Stock should! be half sherry and a dash of mushroom ketchup!!

Can be made with puff pastry - quicker and lighter! - quickly fry seasoned meat for 3-4 mins to seal
