5 x egg yolks
1 x egg
6 tbl sugar
3 tbl cornstarch
3 tbl flour
1/4 cup cocoa powder
1/2 tbl vanilla
2 cup milk
1/2 tbl butter, softened
Instructions:
Instructions: Place egg yolks, egg, sugar, cornstarch, flour, cocoa powder and vanilla in a large mixing bowl and whip until smooth. In a saucepan, bring milk just to a boil and remove immediately from heat. Mix milk into egg mixture, stirring constantly with a whisk. Place mixture in a thick-bottomed pot over low heat and cook 10 to 15 minutes, stirring constantly with a whisk until pudding thickens. Remove mixture from heat and whip with an electric mixer 4 to 5 minutes until smooth. Add butter and whip until incorporated. Place mixture in a covered container, dusting with confectioners sugar to retard development of skin on surface of pudding, and refrigerate.

Makes about 3 cups.
