Instructions: Sift together flour, cinnamon and baking powder.
Cream butter and sugar in a bowl until light and fluffy. Gradually add the flour and eggs. Beat well until light and frothy. Drain the apricot halves and cut them into small pieces. Add them to the mixture with the lemon juice and rind and mix well. Pour into a well buttered puddind basin and secure tightly with lid or foil. Steam for 1 to 1 1/2 hours until pudding is well risen and firm to touch. When ready, turn the pudding out and pour over hot apricot sauce. Email this Recipe:
