Instructions: Roughly chop walnuts.
Beat butter and sugar together in mixer. Add eggs one by one and beat until white and fluffy. Beat in flour and brandy and lastly fruit and nuts. Spoon into well buttered and floured moulds and cover each mould with foil so no steam can get in as the puddings cook. Cook in a covered water bath 35-40 minutes. Serve with custard / ice-cream.
