Ingredients:

75 gm butter
1/3 cup sugar (caster)
1 x eggs
1/2 tsp vanilla essence
1 cup flour, plain
1 tsp baking powder
3 tbl milk
2 tbl raspberry jam
Instructions:
Instructions: Sift flour and baking powder together and set aside.

In a mixer, whisk butter with sugar until creamy.

Beat in egg and vanilla, then gently fold in sifted flour and milk.

Place jam in a 4-5 cup pudding basin or 4 greased individual moulds and spoon in mixture. Cover with 2 layers of greased greaseproof paper and steam for 25 minutes. Longer when in one dish. Serve with custard or cream.
