1 lrg salmon fillet
1 x cucumber chopped
1 x apple chopped
1 x tomato chopped
2 tbl apple cider vinegar
1 tsp dried tarragon
1 tbl olive oil
----------------- WHITE BEAN RELISH ----------------
1 lb white navy beans (Northern bean)
2 tbl olive oil
1 bn green onions white part minced,
chive (green) part cut in 1" pieces
1 tbl minced garlic
1 cup chopped celery
1 x red bell pepper chopped
1 x green pepper chopped
3 x plum or Italian tomatoes chopped
1 tsp paprika
1 tsp garlic salt
1/2 tsp freshly-ground black pepper
Red pepper to taste
1 tsp oregano
1 tsp thyme
Instructions:
Instructions: Place salmon fillet on bamboo steamer rack. Place rack in wok over boiling water. Cover and steam for 10 to 12 minutes or until it flakes easily with a fork. Mix remaining ingredients together in a small bowl. When salmon is done, remove to a serving platter and top with relish.

For the White Bean Relish: Combine all ingredients and let chill one hour.
