1/4 lb broccoli cut into even-sized florets
1/4 lb cauliflower cut into even-sized florets
1 med yellow onion cut into 1-inch dice
1/8 head red cabbage cut into 1-inch-wide wedges
1 x red bell pepper seeded and cut into 1/4" rings
Shredded parmesan cheese
Shredded cheddar cheese
Balsamic or red wine vinegar
Freshly ground black pepper
Instructions:
Instructions: Layer the broccoli and cauliflower pieces in the bottom of a steamer, set over boiling water; cover and cook for about 2 minutes. Remove the lid and layer on the onion, then the cabbage and the red pepper. Replace the lid and continue steaming until all of the vegetables are just barely tender, about 4 to 5 more minutes.

Arrange the vegetables in a bowl, sprinkle lightly with a bit of each cheese (just to add a bit of flavor, but not to overwhelm the dish or add too much fat and calories). Finally, drizzle on a bit of vinegar and sprinkle lightly with a bit of freshly ground black pepper and salt to taste.
