Instructions: In a medium un-covered saucepan, cook onions and garlic in olive oil until tender, but not brown. Add artichokes and mushrooms; a couple of minutes later, add the ham and parsley. Sprinkle with salt and pepper; cook covered for 15 minutes on low beat. Add light cream; keep cooking on low heat, stirring frequently for 5-10 minutes. When mixture is ready, toss with cooked pasta, Parmesan cheese, and pepper.
Makes 4 main course servings, or 6-8 side dishes. Note: A little lip about cooking pasta: make sure you add 1 1/2 tablespoons salt to boiling water to make any pasta dish much more tasty! Also, dont rinse the pasta: just strain it. Email this Recipe:
