Instructions: In a small saucepan, lightly saute garlic in olive oil over a low-medium heat. Add half of the chopped parsley; add clams (drained). Simmer for 8-10 minutes; add tomatoes. Add rest of parsley; cook for 15-20 minutes over low-medium heat. If you like, you can add 1/4 to 1/2 cup white table wine; let it evaporate as sauce cooks. Pour sauce over 1 pound cooked spaghetti; stir in Parmesan cheese, to taste. Serve.
Makes 5 servings. Pasta "Al Dente " (for all pasta dishes): Boil 3 quarts of water in a large pot. Add 2 tablespoons salt to water. Add about 1 pound of pasta of your choice (spaghetti is best for the clam sauce). Read the cooking directions on the package. If the directions call for a cooking time of 9-12 minutes, cook it for 9 minutes and no longer. Always cook to the lower end of the time scale on the package! Email this Recipe:
