Instructions: You may just use cooking spray, but I like the extra richness and gloss of a bit of butter or margarine, so I melt some in a hot skillet. Chop the celery into bite-sized pieces and cut the onion into cubes, rings, or thin wedges. Cook the onion SLOWLY until its tender and translucent. Add the celery and heat it. Add the liquid, be it chicken or beef or vegetable broth or bouillon or cooking wine.
Bring to a boil. Cover, and reduce heat. Simmer for about 30 minutes. Remove cover and raise heat to a high simmer or a boil, to reduce the liquid. Be careful not to let the celery and onion burn or cook completely dry. If the liquid doesnt thicken, mix cornstarch with COLD liquid (more or less that the amount given, depending on how much liquid you have altogether) and add to the pan, stirring until thick and bubbly. Very good on its own or served over rice or meat. Also good mixed with other cooked vegetables and stuffed into pita pockets. (Can we say, "Leftovers? No, we arent having leftovers.)
