1. Marinate chicken for 30 min with 1 tsp of salt, 1 tsp of sugar, 1 tbsp of light soy sauce, 2 tsp of dark soy sauce, Chinese wine, oyster sauce and cornflour. Deep fry in oil for 3 min to seal in juices. Drain. 2. Heat 1 tbsp of oil in a pot. Saute ginger and garlic till fragrant. Add in spring onion, onions and carrots and fry. season with salt, sugar and light soy sauce. 3. Add chicken and stir. Then add water. Cover the pot and bring ingredients to a boil. 4. Lower heat and allow to simmer for about 1/2 hour or until the gravy thickens. Switch off heat, and let it sit for awhile before serving. Email this Recipe:
