Instructions: Cut capsicum into 1/4s. Remove seeds.
1/4 tomatoes. Heat oil in a frying pan and fry garlic gently until golden brown, then discard garlic. Add pepper strips and cook gently 5 minutes, tossing several times during cooking. Cover with tomatoes and herbs, season with salt and pepper. Continue cooking until tomatoes are reduced to a thick sauce. Serve hot or cold, garnished with parsley. Part of the antipasto tray. Serve on crusty Italian bread. It can be served hot with grilled steak or chops and is ideal for picnics. Email this Recipe:
