2 tbl Clarified butter
1 x Portion sized Stingray wing, skin removed
Plain flour
2 tbl Butter
1 tbl Capers
2 tbl Red wine vinegar
Instructions:
Instructions: Heat the butter in a frying pan. Dust the Stingray with flour and season. Fry the Stingray until cooked.

Tip out the butter and add the next lot. When black add the capers and vinegar and parsley. Serve.
