STIR FRIED BEEF ----------------
1 lb Fillet of beef, sliced thinly into strips
2 tbl Olive oil
4 x Cloves garlic, finely chopped
Salt and freshly ground pepper
----------------- MANDARIN ORANGE SAUCE ----------------
Juice from one 11-ounce can of mandarin, or oranges
Juice from 4 fresh mandarin oranges
2 tbl Low sodium soy sauce
1 tsp Fresh ginger, finely chopped
Instructions:
Instructions: How to Prepare Stir Fried Beef:
Heat the oil in a wok until smoking. Add the beef and garlic and stir fry for 2-3 minutes for medium rare or until cooked to your liking. Remove the beef/garlic to a bowl.

How to Prepare Mandarin Orange Sauce:
Add the mandarin juice and soy sauce and ginger to the wok and reduce by half. Add the green onions and cook for 1 minute.

To Assemble:
Add the beef/garlic back to the wok and heat through. Season with salt and pepper to taste.
