1 tbl vegetable oil
1 lrg garlic clove peeled and minced
1 x scallion root ends trimmed,
cut 1 1/2"-long pieces, halved lengthwise
1/2 sm to medium cauliflower head leaves removed,
separated into small florets
8 oz beef sirloin sliced thinly
against the grain
1 dsh sesame oil
1 tbl fish sauce (nuoc mam)
1 tsp thick soy sauce
Instructions:
Instructions: Heat the vegetable oil in a wok over high heat. Stir-fry the garlic until fragrant, about 3 minutes. Add the scallion and cauliflower and stir-fry for 10 to 15 minutes.

Add the beef, sesame oil, fish sauce, and soy sauce, season to taste with pepper, and stir-fry for 5 to 10 minutes more. Transfer to a serving dish and serve with rice.

Variation: Substitute chicken breast meat for the beef.

This recipe yields 4 to 6 servings.
