Instructions: Cut the fish fillets into strips 2.5cm wide and sprinkle the salt evenly over them.
Let them sit for 20 minutes. Cook the peas for 5 minutes in a saucepan of boiling water and then drain them in a colander. Heat a wok or large frying pan and when it is hot add the oil. Let the oil heat up and then add the fish strips. Stir fry these gently taking care not to break them up. Cook the strips for about 2 minutes and then add the ham or bacon peas and all the sauce ingredients except for the cornflour mixture. Bring the sauce to a boil add the cornflour mixture and stir this in well. Cook for another minute and then serve Serve it with Deep fried Green Beans and Ham and Marrow Soup. This dish is often made in southern China with grouper a firm white fleshy fish. It works equally well with cod fillets. It is important to use a firm textured fish which will not fall apart during the Stir frying process. Serves 4 Email this Recipe:
