Ingredients:
Amount Ingredient
350 gm lean lamb steaks or fillet or boned loin chop meat
2 tsp dry sherry or rice wine
2 tsp dark soy sauce
2 tsp light soy sauce
1/2 tsp sesame oil
2 tsp oil
1/2 tsp spring onions finely chopped
3 clv garlic peeled and thinly sliced
Instructions:
Instructions: Cut the lamb into thin slices and put it into a bowl.

Mix in the sherry or rice wine soy sauces and sesame oil and let the meat marinade for 20 minutes.

Then drain off the marinade liquid.

Heat a wok or large frying pan.

When it is very hot add the oil.

Then add the marinaded lamb pieces with just a little of the marinade.

Stir fry for 2 minutes.

Now add the spring onions garlic and ginger and continue to stir fry for another 4 minutes.

Serve immediately.

The tenderest parts of the lamb such as steaks or chops are best for this dish.

Serve it with rice and Braised Spicy Aubergines (qv)
