Instructions: Put the peanut oil into a large wok or frying pan and set over medium-high heat. When hot, put in the mustard seeds. As soon as they pop, a matter of seconds, put in the scallion. Stir and fry for 15 seconds. Put in the chile, lentil sprouts, and salt. Stir and fry for 3 to 4 minutes, or until the sprouts are just cooked through. Add the lemon juice and pepper to taste. Toss to mix and taste for the balance of flavors, adding more as needed. Serve hot, at room temperature, or chilled.
