2 tbl groundnut or vegetable oil
2 lrg cloves of garlic peeled and chopped
1 med hot red chilli seeded and sliced
6 x lime leaves rolled and very finely shredded
2430 med prawns in their shell
1 tbl Thai fish sauce
Instructions:
Instructions: Get a large wok really hot then add enough oil to make a puddle in the bottom.

When it gets really hot almost smoking throw in the garlic and let it brown while you stir it so that it does not burn.

Add the chilli and the lime leaves.

Fry for a few seconds then put in the prawns.

Stir fry for about 4 minutes unless the prawns are pre cooked in which case 2 minutes should do it.

Splash over the fish sauce and a grinding of salt and pepper.

Squeeze over the lime juice then eat straight away.

Serves 2
