Instructions: Wash the spinach thoroughly.
Remove all the stems leaving just the leaves. Heat a large wok or pan to a moderate heat. Add the oil and then add the salt and spinach. Stir fry for about 2 minutes to coat the spinach leaves thoroughly with the oil and salt. When the spinach has wilted to about one third of its original size add the sugar and garlic and continue to stir fry for another 4 minutes. Transfer the spinach to a plate and pour off any excess liquid. Serve hot or cold. Spinach has often been regarded with disdain in the West probably because it is usually overcooked. This is a timehonoured delicious southern Chinese recipe. The spinach is quickly stirfried and then seasoned. It is very simple to preparm and may be served hot or cold. Serves 4 Email this Recipe:
