Instructions: Combine ginger, garlic, soy sauce and sherry or rice wine and pour over fish chunks. Marinate fish in this mixture for 20 minutes. Drain the fish reserving the marinade.
Heat 1/4 cup of peanut oil in wok until it begins to smoke. Add fish and cook 2 minutes, stirring until it is browned. Remove fish and wipe wok clean. Add the remaining peanut oil and stir-fry the peppers and broccoli for 2 minutes. Add snow peas and scallions and cook for 1 minute. Add the fish, marinade, stock, oyster sauce and sesame oil.
