Instructions: Remove the skin of the pineapple and cut into cubes and place in a bowl.
Cut the chicken into slices across the grain. Slice the ginger and the chilli into match sticks. Chop the garlic and slice the spring onion. Heat the oil in a wok and add the ginger, garlic and chicken. Stir for 2 minutes and add the pineapple. Continue to stir for eight minutes adding the soy sauce, fish sauce, sugar, pepper and chilli.
