Ingredients:

250 gm Egg noodles, (8oz)
2 tbl Olive or sunflower oil
1 sm Onion, chopped finely
1 x 250 gram pac stir-fry turkey breast strips, (8oz)
125 gm Mange tout, (4oz)
1 x Red pepper, de-seeded and sliced finely
150 gm Pak choi, (Chinese cabbage) or spinach, chopped (5z)
200 gm Bean sprouts, (7oz)
2 tbl Light soy sauce
1 tsp Chilli sauce
Instructions:
Instructions: Cook the noodles according to the instructions on the packet.

Meanwhile, heat the oil in a wok or large frying pan until sizzling.

Add the onion and cook for 2 minutes.

Add the turkey and stir fry for 2-3 minutes.

Add the mange tout, pepper and pak choi or spinach and cook for 2 minutes.

Stir in the bean sprouts and soy and chilli sauces and toss together well.

Cook for 1-2 minutes. Adjust the seasoning to taste.

Drain the noodles and spoon into serving bowls. Arrange the stir fry on top and serve immediately.
