Ingredients:

800 gm pork, diced
2 x egg whites
1/2 tbl cornflour
1/2 cup oil for frying
----------------- SAUCE: ----------------
3 tbl blackbeans
3 tsp garlic, crushed
1/2 tbl ginger, crushed
1 tbl sherry, dry
1 tsp chilli paste
2/3 cup chicken stock
3 tsp cornflour
1 tbl soy sauce
1 tbl oyster sauce
Instructions:
Instructions: Combine all ingedient for sauce and mix well. Place in an electric blender for 30 seconds or until smooth.

Cut pork into strips, place in a bowl with cornflour and eggwhite and mix well to coat.

Heat oil in wok, add pork in small batches and fry until golden brown, about 3 minutes. Remove from pan and keep warm. Drain of oil leaving 2 tablespoons in wok.

Add onion, peppers, stir fry until just tender. Add black bean sauce to wok, boil until sauce thickens. Return pork to pan with water chestnuts, stir fry until heated through. Serve in lettuce cups.

Serves 4.
