1 tbl butter or margarine
2 lb sweet potatoes or 2 (16-ounce) cans, peeled and cut into 1 inch
slices
1/2 cup dark brown sugar, firmly packed
1/2 tsp salt
Pinch of black pepper
Instructions:
Instructions: Melt butter or margarine in a large heavy skillet over moderate heat. Layer in the sweet potatoes and sprinkle with the brown sugar, salt and pepper.

Add orange juice. Cover and simmer over medium-low heat 35-40 minutes for fresh potatoes, 20 minutes for canned, or until potato slices are tender.
