Instructions: Saute diced onion and minced garlic in hot oil in a large skillet over medium-high heat; add chopped tomato and next 4 ingredients, and saute until zucchini is tender. Drain and set aside.
Arrange bread slices in the bottom of a lightly greased 13- by 9-inch baking dish. Whisk together egg substitute and next 4 ingredients; pour over bread slices. Top with tomato mixture, and sprinkle with cheeses. Cover and chill 8 hours. Let stand at room temperature 30 minutes before baking.
