1 x onion diced
3 x garlic cloves minced
2 tsp olive oil
3 x tomatoes peeled, chopped
1 sm zucchini diced
1/2 cup sliced fresh mushrooms
1/3 cup chopped fresh basil
1/3 cup chopped fresh oregano
6 x light white bread slices
2 cup egg substitute
1 cup skim milk
1/2 tsp salt
1/4 tsp freshly-ground black pepper
1/8 tsp ground red pepper
1/2 cup shredded reduced-fat mozzarella cheese (6 oz)
Instructions:
Instructions: Saute diced onion and minced garlic in hot oil in a large skillet over medium-high heat; add chopped tomato and next 4 ingredients, and saute until zucchini is tender. Drain and set aside.

Arrange bread slices in the bottom of a lightly greased 13- by 9-inch baking dish.

Whisk together egg substitute and next 4 ingredients; pour over bread slices. Top with tomato mixture, and sprinkle with cheeses. Cover and chill 8 hours.

Let stand at room temperature 30 minutes before baking.

Bake casserole at 350 degrees for 50 minutes or until lightly browned and puffed.

This recipe yields 8 servings.
