Instructions: In a small bowl, whisk together egg, egg white, sweetener, flour, oil and vanilla. Pour into non stick skillet, swirl to spread evenly. Cook over medium-low heat for about 5 minutes or until top of omelet is set. Remove from heat; spread cottage cheese evenly over top. Slice strawberries and arrange evenly over cheese. Gently fold omelet in half and remove to warm platter. Sprinkle lightly with cinnamon and cut in half to serve.
