Recipe for Strawberry-Cheese Horseshoe

1 lb	sharp Cheddar cheese block shredded
1 cup	mayonnaise
1/2 cup	chopped onion
1/4 tsp	salt
1/4 tsp	freshly-ground black pepper
1/4 tsp	ground red pepper - (to 1/2)
1 cup	chopped pecans toasted

Instructions:

Instructions: Beat first 6 ingredients at medium speed with an electric mixer until blended; stir in pecans. Shape mixture into a horseshoe shape, or spoon into a 5-cup mold. Cover and chill 8 hours.

Spoon preserves over cheese mixture, and serve immediately with crackers or bread rounds.

This recipe yields 12 to 16 appetizer servings.

Comments: Cheese mixture may be prepared up to 2 days ahead.
