Instructions: Wash the berries, remove stems, and cut each berry into two or three pieces.
Place them in the jar in which they are going to steep, and sprinkle the powdered sugar over them. Pour the vodka over them, close the jar tightly, and let steep for one week. After steeping, strain with a wire strainer and crush the berries to produce all the juice possible. Add the sugar syrup and filter through cloth several times, beginning with cheesecloth if you have it, or cotton of a very coarse weave, and then going to a more dense weave or two or three thicknesses of cloth. When all the pulp has been removed the cordial is ready. Another recipe for strawberry cordial is useful when fresh strawberries are not in season, and since it requires no steeping time, it can be made in one day. Like the preceding recipe, it produces a pleasant but not outstanding cordial, with a mild to moderate, rather than intense, flavor of strawberries. Email this Recipe:
