Instructions: In a large bowl, combine 1/2 c. of the sugar, and the oil. Stir in the berries and pecans. In a small mixer bowl, beat the egg whites until soft peaks form(tips curl) Gradually add remaining sugar, beating until stiff peaks form.(tips stand straight) Gently fold in strawberry mixture. Cover bottom of 8 x 8 pan with graham cracker squares. Spread 1/3 of the berry mixture over the crackers. Top with more crackers. Repeat 2 more times. Topping with 9 crackers.
Chill overnight. Spread with cool whip. Sprinkle with graham cracker crumbs. Since its not safe to use raw eggs, it is suggested that you use the "Just Whites" found in grocery stores. Email this Recipe:
