plain pastry for one
9 x inch crust
1 pt lemon sherbert softened
3 x egg whites
1/2 tsp vanilla
1/4 tsp cream of tarter
7 tbl sugar
Instructions:
Instructions: Fit pastry into a 9 inch pie plate trimming 1/2 to 1 inch from the edge. Fold under and flute edge of pastry. Bake at 450 degrees for 10 to 12 minutes or till golden. Cool completely. Spread sherbert in bottom of pastry shell; freeze unil firm, 4 to 5 hours or overnight. Beat egg whites with vanilla and cream of tartar till soft peaks form. Gradually add 6 Tablespoons of sugar, beating till stiff and glossy peaks form.

Sweeten strawberries with remaining sugar. Working quickly, arrange strawberries over lemon sherbert. Spread meringue over berries being careful to seal meringue to edge of pastry. Place pie on cutting board and bake at 475 degrees for 5 to 6 minutes or till meringue is golden.

Cut in wedges with sharp knife dipped in water. Serve immediately.
