3 x eggs
175 gm self raising flour
175 gm caster sugar
175 gm softened butter or margarine
rated rind 1 lemon
100 gm sultanas
topping:
100 gm plain flour
2 tsp ground cinnamon
50 gm soft brown sugar
50 gm demerara sugar
Instructions:
Instructions: Line the small roasting tin with bake o glide or foil.

Grease the foil lining.

Put the eggs flour caster sugar butter and lemon rind for the cake into a bowl and mix well until light and fluffy.

Stir in the sultanas.

Put the mixture into the prepared tin and level the top.

Prepare the streusel topping: measure the flour cinnamon and sugars into a bowl. Rub in the butter until the mixture resembles breadcrumbs.

Sprinkle over the cake mix.

To bake:
For the two oven aga slide the roasting tin onto the bottom set of runners of the roasting oven.

Put the cold shelf onto the second set of runners from the top.

For the four oven aga bake the cake on the bottom set of runners of the baking oven.

Bake for 40 to 45 minutes until golden brown springy to the touch and slightly shrunk from the sides of the tin.

Cool on a wire rack.

Cut into pieces before serving.

Sufficient for the small roasting tin
