Instructions: 1. Preheat oven to 375 degrees. Spray a 12-cup muffin pan with cooking spray and set aside.
2. To prepare the topping: In a medium bowl, combine the softened butter, brown sugar, oats, flour, walnuts, cinnamon and nutmeg, stirring with a fork until the mixture is crumbly. Set aside. 3. To prepare the batter: In a large bowl, combine the flour, brown sugar, baking powder, soda, salt, cinnamon and nutmeg. Stir until well blended. 4. Whisk together the buttermilk, egg and vanilla. Pour into the dry ingredients, followed by the melted butter. Stir until evenly moistened; do not overwork. 5. Spoon the batter evenly into the prepared muffin cups. Sprinkle the topping over the tops. Bake until golden and a toothpick inserted in the center comes out clean. 6. Cool on a wire rack 10 minutes before unmolding. Email this Recipe:
