Instructions: Cut 1/4 to 1/2 inch slice off top of baked potatoes. Scoop out pulp and place in mixing bowl. Add sour cream, cream cheese, instant or chopped onion, and salt. Combine ingredients and mix with mixer until potatoes are fluffy. Spoon potato mixture into potato shells. Place on baking sheet; sprinkle with paprika. Brown in preheated oven at 400 degrees for 15 minutes.
NOTE: Prepare stuffed potatoes ahead of time and refrigerate or freeze them. Thaw frozen potatoes before heating and increase baking time of chilled potatoes to 30 minutes. Email this Recipe:
