3/4 tsp turmeric
3/4 tsp cayenne pepper
1/2 tsp cumin
2 tbl yoghurt
2 tbl chopped tomato
2 x red onions peeled chopped and sauteed
1 tbl grated fresh ginger
1 x cm cinnamon stick
1/2 tsp coriander seeds
3 x cardamom pods
1 clv garlic peeled
160 ml vegetable oil
1 x 900g seabass deboned (ask your fishmonger to bone and scale an ungutted fish from the back)
6 x spring onions
Instructions:
Instructions: Place the spices yoghurt tomato red anion ginger and oil in a blender together with 1 tsp salt and blend to a fine puree.

Pour over the fish and marinate for at least 4 hours (or overnight).

Mix the spring onions with the paneer 2 tbsp of the marinade and a pinch of salt.

Use this to stuff the fish sealing the opening with a strip of foil.

Secure the fish in a fish grill and barbecue for about 15 minutes each side basting occasionally with the remaining marinade.

Good hot or cold. It also works with trout.
