4 tbl butter or margarine
divided
1/2 cup shredded zucchini
3/4 cup water
1/2 pkt stuffing mix (6 1/2 ounces)
with rice
1/2 cup shredded mozzarella cheese
1 tsp grated lemon peel
2 tbl lemon juice
1/2 tsp crushed leaf basil
1 x roasting chicken (4-4 1/2 pounds)
Instructions:
Instructions: In a large saucepan, melt 1 tablespoon butter. Saute zucchini until tender. Stir in water and seasonings from stuffing mix. Bring to boiling; remove from heat. Add stuffing mix; toss lightly with a fork until moistened. Let stand 15 minutes to cool slightly. Stir in cheese. In a small saucepan, melt remaining 3 tablespoons butter. Stir in lemon peel, lemon juice and basil; set aside. Rinse chicken; pat dry with paper towels. Srpinkle cavity with salt. Stuff cavity and neck lightly. Secure neck skin to back of chicken with skewers. Press wings over breast and tie with heave string. Tie legs together; tie legs to tail. Insert spit rod under legs and through center of bird. Secure with holding fork. Test balance; attach to spit. Turn on motor. Grill over drip pan surrounded by medium hot coals 1 1/2 to 2 hours or until tender, basting often with lemon butter mixture.
