Try to keep the tops of the cores intact as they will help to hold the shape of the chillies during baking. Mix all of the ingredients together for the filling pack it into the chillies and put them in a small baking tin. Cook for 15 minutes in the roasting ovenuntil the chillies are tender and the topping has browned. Soak the noodles in boiling water for 3 minutes then drain them thoroughly. Heat the oil in a pan add the noodles and toss them in the oil until hot then stir in a little salt and pepper with the chives.
