120 gm spinach
135 gm fresh ricotta cheese
4 tbl chopped fresh basil
3 tbl freshly grated Parmesan
large pinch freshly grated nutmeg
slice of 1 garlic clove crushed
1 x salt and freshly ground pepper
8 x courgette flowers
Instructions:
Instructions: There are two types of courgetteflows. The one sold with the little courgette attached is the female. However if you know a farmer or a keen gardener who grows courgettes go and see him as he may give you male flowers which are the ones attached to a stem without the courgette.

Wash the spinach well cook and allow to cool and squeeze to remove excess liquid.

Mix the spinach ricotta cheese basil Parmesan 1 egg nutmeg garlic salt and pepper together well.

Using a piping bag three quarters fill each courgette flower.

Beat the remaining egg and coat each flower with it.

Shallow or deep fry the flowers until golden.

Serve at once.
